STREAMLINER – Costa Rica, San Juanillo 12 oz.

We’re excited to share another micro-lot coffee, this time from San Juanillo, Costa Rica, where the family Jose “Don Pepe” Francisco Aguilar has been cultivating coffee since the 1950s. This honey processed Catui varietal is mellow, fruity and sweet on the light side of medium roast.
The term “honey process” refers to a special drying technique in which the coffee beans are removed from the cherry skin but left in their flesh, or “mucilage”, to dry slowly in the sun. This labor intensive process is a Costa Rican specialty, used to impart extra sweetness, clarity and depth of flavor. “Honey” refers to the sticky quality of these beans as they dry.
